This cut is from the shoulder of the cattle. You can prepare this steak by lightly seasoning with salt and pepper. Sear in hot oil in a large skillet over medium-high and heat 3-4 minutes on each side or to desired degree of "doneness." Let stand 5 minutes. Cut diagonally across the grain into thin strips.
